YUKO FUJII - Pastry Chef
Yuko Fujii was born and raised in Osaka, Japan. In 1993 she moved to New York and after living in the city for several years, attended the French Culinary Institute. After graduating, she worked as a pastry cook for the legendary pastry chef and chocolatier, Jacques Torres, at famed restaurant, Le Cirque 2000. At Le Cirque, Yuko built a strong foundation in classical French and Italian pastry arts.
She continued her training at trendy Falai restaurant, where she not only made pastries, but worked as a production bread baker responsible for the restaurant's in-house breads. Yuko then moved to San Francisco, lured by the weather and the incredible ingredients available to California cooks. She worked as the Pastry Chef of Elizabeth Faulkner's Citizen Cake in the former Hayes Valley location, then as Executive Pastry Chef of Michelin starred restaurant The Fifth Floor.
Yuko brings a decade of experience in pastry and baking to bushi-tei and is excited to bring her classical culinary training to bear upon the Japanese flavors of her youth.
